Liquid Gold Nourishing Bone Broth

Chicken bone broth is a collagen powerhouse, traditionally reversed for its nourishing and healing properties and can be one of the few things we fancy when we’re bed bound. Rich in nutrients that support gut health, bone health and immunity, this slow-simmered broth transforms simple ingredients into a deeply restorative elixir. For an extra collagen boost, don’t be shy with the chicken feet – if your broth sets into a firm, jiggly gel in the fridge, you’ve done well. While it requires around 48 hours of gentle simmering, the result is a delicious, nutrient-dense broth that’s perfect as a base for soups, stews and risotto, or simply enjoyed on its own as a warming daily tonic.

How to make this nourishing bone broth

Ingredients

  • 3 tbs olive oil
  • 2 brown onions, diced
  • 5cm piece of fresh ginger, grated
  • 1 tblsp freshly grated turmeric
  • 4 cloves of garlic crushed
  • 1 medium carrots, diced
  • 3 x chicken bone carcasses
  • 500 grams chicken feet … yes … lotsa collagen in these 😊
  • 2 celery sticks or leafy tops, diced
  • Salt and pepper to taste
  • 2 teaspoons mixed herbs
  • 1tlbs apple cider vinegar
  • 6 + litres of water

Method

  1. Heat oil and fry onions till golden. Add ginger, turmeric and garlic and stir.
  2. Add chicken bones and feet and lightly brown.
  3. Add celery and carrot and stir.
  4. Add mixed herbs, vinegar, water, salt and pepper.
  5. Bring to the boil and then simmer for 24hours, adding extra water every 6 hours.
  6. Pour the soup through a sieve, pressing the contents firmly through to extract your delicious nutritious broth.
