Easy Hiking Share Plates That Will ‘Wow’ Your Friends

By the Wild Women On Top Team

Here at Wild Women, we’re big fans of the ‘bring a plate to share!’ model of eating. Gathering around a picnic blanket and enjoying a smorgasbord of scrumptious treats is excellent in more ways than one.

But sometimes ‘bring a plate!’ can be a right pain in the bum – especially if you’re short on time, cash or inspiration.

To help you avoid the boxed chocolate aisle on the way to your BBQ or picnic this long weekend, we’ve pulled together some great ideas for when you need a quick, fabulous and impressive share plate – without lots of effort.

Enjoy!

If you’re short on… time: Smoked Salmon and Cream Cheese Sandwiches

This ‘recipe’ is perfect for the time-poor among us – it’s super quick, easy and you can get it on the way to the event at your local supermarket. All you need to pack is a knife.

  • 500g smoked salmon
  • Jar of capers
  • 1 lemon
  • Loaf of sourdough/fresh baguette
  • Cream cheese
  • Red onion (if you can be bothered!)

Pull the salmon out of its package. Cut the lemon into wedges and arrange around the edge of the salmon. Sprinkle on capers and cut the bread. If you want to, cut fine slices of red onion and sprinkle it on. Let people make their own delicious sandwiches.

If you’re short on… money: Bread and Dipping Oil

If you’re cutting it fine close to pay day or trying to save cash, ‘bring a plate’ can be a really annoying ask. Here’s a ‘plate’ you can make for under $10 (you’ll need a few pantry staples though). It’s also quick, but requires about 10 mins of prep at home before the event.

Bread:

  • Loaf of good quality sourdough bread (It’s all about the bread… quality here is key!)

Dipping oil

  • Extra virgin olive oil (I use the oil that comes with goat’s cheese or feta)
  • Italian herbs
  • 1 clove of garlic, minced
  • Juice of half a lemon
  • Salt and pepper
  • Parmesan cheese, finely grated (only if you’ve got some!)

Mix all the stuff in a jar and shake it on up. Slice the bread. Watch it disappear!

If you’re short on… inspiration: A Very Fancy Cheese Board

This recipe is one of my favourites as it’s easy, quick and can be made on top of a cliff, but people LOVE it. It’s essentially a very fancy cheese board.

You can get the recipe here.

And a sweet option, for good measure: Summer Berries with Mascarpone Cream Cheese

  • 3 punnets of berries (strawberries, blueberries and raspberries work well)
  • 1 small tub mascarpone
  • Maple syrup, if you're feeling fancy!

Grab a bowl and a spoon from home. Put the berries in the bowl, spoon on the mascarpone in dollops and drizzle with maple syrup. Fancy.
